Make This: White Bean & Roasted Eggplant Hummus
Holy cow, this was a cinch to make, and it is divine with some Stacey's "Naked" Pita Chips or some fresh carrot slices. YUM! (This was also the very first time I prepared something with eggplant--the experiment was successful!)

I'm interested to try this. We eat eggplant on occasion, usually as eggplant oven fries or some other such side dish. I don't love it on it's own, but it provides good substance in a recipe. Try eggplant parmesan.
